Apple and zucchini biscuits by ZEUS - Eng

Only in my house in the summer do you eat zucchini in all possible and imaginable ways at every meal? Boiled, sautéed or baked ... And the benefits for our furry friends? well there are not a few: zucchini are rich in nutrient resources such as potassium and vitamin C, but let's not forget the low caloric rate, which counts about 2 or 3 calories per slice! But moderation in consumption is always the key!


Today I tried a super recipe from @_zeustheweim_


TIME: 15 minutes for the recipe and 20 for cooking


INGREDIENTS (for about thirty biscuits)





1 egg

300 gr (2 and 1/2 cups) - wholemeal flour (oats)

80 gr (1/3 cup) - homogenized with apple (or apple puree)

half zucchini

15 ml (1 tsp) - extra virgin olive oil

a bit of water


METHOD


  1. First of all (if you do not use the baby food) you need to peel the apple, remove the core and the seeds. Then cut it into small pieces.

  2. Put the apple pieces in the blender with a drop of water and blend well.

  3. Take the courgette, wash it well and cut the ends. Grate the courgette or alternatively cut it into small pieces and then blend it with a drop of water until you get a cream.

  4. In a bowl add the flour, the egg, 80 gr of apple puree (the remaining puree can be used to make the recipe "ROY's apple Frozen treats", super recommended !!), the zucchini cream and the oil.

  5. Mix well and start kneading.

  6. If the dough is too dry, add water to taste.

  7. Roll out the dough to a thickness of 0.5 cm and then cut it with a cookie cutter.

  8. Bake in a preheated static oven at 180 ° C for about 20 minutes.


CONSEVATION


Store for 2 weeks in an airtight container (given the high summer temperatures it is better to put the container in the refrigerator). Alternatively, some of the cookies can be frozen.
