For the cookies (more or less 15 pieces)
360 gr - spelled/wholemeal flour
5 gr - cinnamon powder
3 gr - ginger powder
70 gr - coconut oil
170 gr - honey
180 ml - water
For the glaze
60 gr - rice flour
15 ml - water
(if you need cup measurements send me a message)
INSTRUCTIONS
Put the flour in a bowl and add ginger and cinnamon. Mix the powders well.
Then add water, honey and coconut oil (previously melted).
Mix as long as possible with a spoon and then mix with your hands.
When the dough is no longer too sticky, roll it out with a rolling pin (helping us with a little extra flour to keep it from sticking), with a thickness of about 1 cm.
Cut the dough with the mold of your choice, I used a sheet of paper in the shape of a gingerbread man.
Then bake them in a preheated static oven at 180 ° C (356 ° F) for about 20 minutes, until they are amber in color (not burnt attention).
Once ready let them cool out of the oven.
To prepare the glaze just pour the rice flour into a small bowl and add the water a little at a time until you get the ideal consistency (not liquid but not solid).
Now you can decorate your cookies as you like!
CONSERVATIONS
Cookies keep well for more than a week in the refrigerator.
